Cheese Spinach and Jalapeño Omelette
San Marcos Jalapeño Peppers
of panela cheese
Chopped onion to taste
salt to taste
Nonstick cooking spray oil
Using a bowl, whisk together the egg whites, yolk, San Marcos jalapeño peppers, onion and salt until the ingredients are integrated.
In skillet with lid using an oil-spray, add the mixture, covering the bottom in the form of an omelet, cover with the lid and let it cook.
Add the spinach and cheese halfway to one end, using a spatula fold half the tortilla and let it cook until ready.
