Cut the San Marcos peppers in half, scoop out the seeds with a spoon.
In a bowl, combine the two cheeses until smooth. Spoon the cheese mixture into the halved San Marcos Jalapeños. Wrap the jalapeños in a bacon strip, secure the bacon with a toothpick through the middle
Preheat the oven to 350°F. Place the jalapeños on a nonstick tray with the halved side facing up. Bake until the bacon is cooked and the edges are a crispy. Let it cool.
