Ingredients
- 1 boneless and skinless chicken breast 8 ounces
- 1 teaspoon Iberia adobo seasoning
- 3/4 cup plain yogurt
- 1-1/2 teaspoons grated lime zest
- 2 tablespoons Iberia Lemon Juice
- 1/4 teaspoon salt
- 1/8 teaspoon Pepper
- 1 cup peeled chopped mango
- 1/3 cup finely chopped red onion
- 4 flour tortillas
- 1/2 cup crumbled blue cheese
- 2 tablespoons minced fresh cilantro

Instructions
- Sprinkle chicken with Iberia adobo seasoning. Add extra virgin olive oil on a pan to grill chicken over medium heat for 6-8 minutes on each side.
- In a small bowl, mix yogurt, lime zest, Iberia lemon juice, salt and pepper.
- Finely chop the chicken and move it to a small bowl. Add in mango and onion.
- Grill tortillas over medium heat for 2-3 minutes,
- Top with chicken mixture and blue cheese.
- Grill for additional 2-3 minutes or until bottoms of tortillas are lightly browned.
- Drizzle with yogurt mixture and sprinkle cilantro.
- Cut each tortilla into 4 wedges and serve.
